Can cabbage be dried for the winter? Some of the cabbage that did not go for storage in the cellar or for fresh storage at home can be dried for the winter.

Drying cabbage is not popular in our country, although it can do the hostess a good service in winter. Any kind of cabbage perfectly amenable to drying both in a special dryer for vegetables and fruits, and in an oven. But heads of cabbage and forks require little preparation for this process, because. it is impossible to dry them entirely.

Vegetables prepared in this way are used as an additive in soups, main courses and even pies.

At the same time, they will not taste different from ordinary ones, because the only difference between them is lack of moisture, which is compensated during cooking.

Benefit or harm?

Dried cabbage will carry more good than fresh, which will lie for several months in the refrigerator at home or in a grocery warehouse somewhere in the city.

When drying at low temperatures (in a special dryer, usually only about 50 degrees), all vitamins and minerals, which so easily disappear during long-term fresh storage.

The same amount of benefit remains frozen, but not everyone has a large freezer to hold all of their supplies.

Besides health benefits, there are pluses for the family budget... Cabbage should be dried when it is harvesting season, and vegetable prices will be the lowest in the year:

  • White-headed - from September to November;
  • Broccoli - October to May
  • Colored - from October to December;
  • Kohlrabi - from June to October;
  • Brussels sprouts - from October to March, and it is usually always imported to Russia from Europe (learn how to store Brussels sprouts here).

The calorie content and energy benefits of dried cabbage are presented in the table:

Type of cabbageCalorie content, per 100 gVitamins and minerals
White-headed278Vitamin C, group B and PP. Contains phosphorus, potassium and calcium.

A novice housewife should get the hang of not adding too much dried vegetable to the dish, otherwise the calorie content of the finished product can jump up a lot. At the same time, do not forget which types of cabbage are more high-calorie and which are less.

It should be noted that the most high-calorie types have the highest concentration of vitamins, macro- and microelements. So you shouldn't avoid them at all.

Basic Rules

Which varieties of cabbage are best for drying? Any cabbage is suitable for drying, but when choosing, you need to start from which dishes it will be added to.

The most popular option - harvesting white cabbage for making soups.

For this purpose, it is better to select those varieties that are harvested in early autumn. The second most popular is cabbage colored - it is added to vegetable stews, and sometimes eaten instead of chips (read here about where and how to keep cauliflower fresh for the winter longer at home). Then comes broccoli for soups and instead of seasoning, and in last place - kohlrabi and brussels.

The popularity of a particular type depends to a large extent on the prevalence of a particular cabbage in the gardens and on the shelves, as well as on their cost. Cheaper cabbage is more popular and vice versa. And also the breadth of use of dried vegetables plays a role: there are much more recipes with white cabbage than with kohlrabi (read about the varieties, harvesting and storage of kohlrabi here).

How to prepare cabbage for drying? The main rule for dehydrating cabbage is that it should not have rotten spoiled places... So, before drying, all the raw materials must be sorted out and separated what will not be used: in white cabbage, Brussels sprouts, colored and kohlrabi, these are outer green leaves.

In addition, cauliflower and broccoli need cut the inflorescences from the stem and stumps... Next, all the cabbage is washed (for white cabbage, you can skip this step) and start cutting and drying.

How to dry cabbage? Can cabbage be dried in a dryer? Cabbage is usually not dried in the sun, so there are two options:

  1. Baking tray in the oven.
  2. Electric drier tray.

The dryer is designed so that there is nothing to does not stickand is easy to clean. But the baking sheet from the oven should be greased vegetable oil or, even better, lay out baking paper.

Now on sale there are special silicone mats for rolling out the dough, and they can also be used in the oven. Usually pies and pizza are cooked on them at a temperature of about 250 degrees, so when vegetables are dried for a long time, nothing will happen to them either. Nothing sticks to such a rug, and after it you do not need to wash the baking sheet.

At what temperature to dry cabbage? The optimum temperature for drying cabbage is 45-80 degrees... In this case, you can not be afraid that it will burn during harvesting. These low and precise temperatures can only be set in an industrial environment or on a home electric dryer.

On some slabs the minimum value is 50 degrees, while on others it is 100.

If you send the cabbage for drying in the oven on the mode above 120 degrees, then the vegetables are fried but not dry.

So for the oven it is worth choosing the range from 50 to 100 degrees.

Also, an important condition for drying is to allow excess moisture to come out. The dryer does this automatically, but on the stove you will need convection mode... If it is not there, then you can squeeze a wooden pencil between the door and the oven.

It will not burn out during the process, but will allow you to keep the oven slightly open, which will ensure the release of moist air to the outside. If this is not done, the cabbage may begin to stew rather than dry out.

How to determine readiness? Finished vegetables lose significantly in size. They also change color, which is especially noticeable in light types of cabbage - it becomes slightly yellowish... If you press hard on the dried piece, it will not let the juice out.

At the same time, the cabbage should not crumble when it is picked up - this indicates that the vegetable overdried... It can still be used for food, but over time it will turn into dust and will give only its aroma to the dish.

Sushina storage

How to store dried cabbage? Store dried vegetables in glass jars, plastic containers, or best of all, in cloth cotton pouches.

It is very important that such blanks could "breathe", but at the same time they were not damp or moldy.

The last problem arises if the vegetables are not completely dried, so in case of any doubts from the hostess, they can be darkened again in the oven or in the dryer for half an hour or an hour.

Closed containers must sometimes be taken out and given a little to the contents. get some air... Such a check is done every 2-3 months. When properly dried and stored properly, cabbage can be stored up to two years, and she will help out not only in the home kitchen, but also during the hikes and travels.

Features for broccoli

This type of cabbage is quite difficult to keep fresh at home, so broccoli is often frozen or dried for the winter.

It is most convenient to do this in special dryer for vegetables and fruits, but in the absence of such, you can turn to oven.

The process itself is not very different from drying white cabbage, but this type requires much more time (about the storage of white cabbage is described here).

To cut it even slightly, you can cut the inflorescences into halves. Since drying vegetables in the oven consumes a lot of electricity, with frequent such preparations, it makes sense to purchase an electric dryer, which is more economical.

  5. The oven temperature is set 50-100 degrees, let it warm up and send a baking sheet with prepared cabbage there for 3-5 hours.
  6. Since broccoli and cauliflower have thick stems, it can take a while to dry. up to 5 hours... In this case, the cabbage must not be left unattended and, at least once every half an hour, it must be turned over and checked so that it not burnt.

The drying process will go faster if the inflorescences are cut thin plates... This is done after blanching in hot water. And during drying extremely importantso that the inflorescences do not obscure each other and lie in one layer.

If the oven has convection mode, then it must be turned on, and if it is not, then the door must be kept slightly ajar.

How is drying done in the oven white cabbage, Brussels sprouts and kohlrabi? For these species, the process is slightly different:

  1. At the head of cabbage, the outer spoiled and dirty leaves are separated.
  2. Cabbage is shredded and sent into boiling water for 3 minutes.
  3. Then the vegetables are left for half an hour or an hour a little dry out.
  4. Dried cabbage is laid out in 1 layer on a baking sheet and sent to a previously preheated oven at a temperature 50-100 degrees.
  5. Dried shredded cabbage 2-3 hours, not forgetting about the convection mode or the slightly open door.

How to dry broccoli and cauliflower in an electric dryer? The preparation process for drying these types of cabbage in an electric dryer is the same as for the oven.

But the process may take much more time, i.e. with this method, if it is possible to use a lower temperature, which is preferable to do.

At a temperature 60 degrees the process can take up to 6 hours. In this case, the lower tiers are usually ready earlier than the upper ones. Since these types of cabbage contain a lot of moisture, every hour and a half it is necessary to check whether something is burning, and it is also recommended to rearrange the tiers in places so that everything dried out evenly.
